Description
Ground turkey with an assortment of vegetables for a healthy and low-calorie meal.
Ingredients
- 3 Tablespoons Olive Oil
- ½ Medium White Onion, Chopped
- ½ Red Bell Pepper, chopped
- ½ cups Baby Carrots Chopped
- 1 cup Green Beans, Chopped
- 10 Grape Tomatoes, Halved
- 4 cloves Garlic, Chopped
- 1 teaspoon Garlic Powder
- 1 pound Ground Turkey
- 1 teaspoon Sea Salt
- 1 teaspoon Chili Powder
- 1 teaspoon Oregano
Preparation
1. Heat 2/3 of the olive oil in a large skillet on medium high heat.
2. Add onion, red pepper, carrots, green beans and tomatoes and cook for 4 minutes, stirring every minute.
3. Add garlic and garlic powder and cook for another minute, stirring as it cooks.
4. Push the vegetables to one side of the pan and position pan so that it is off the burner on the side with the vegetables.
5. Add remaining olive oil to the empty side, add ground turkey and season with salt, chili powder and oregano.
6. Cook for 4 minutes without stirring, then break up the turkey and stir until cooked through, about 3 minutes.
7. Stir together turkey and vegetables and cook for an additional minute, season with more salt and chili powder if desired to taste.
