Description

A great brunch recipe – serve with bacon and fresh fruit.

Ingredients

  • 1 whole Egg
  • ½ cups Flour
  • ½ cups Ricotta
  • ½ teaspoons Vanilla
  • 3 Tablespoons Sugar
  • ½ cups Powdered Sugar, Plus Extra For Sprinkling The Cooked Beignets
  • ½ Tablespoons Lemon Zest
  • 1 pinch Salt
  • 1 pinch Cinnamon
  • Vegetable Oil, For Frying

Preparation

Combine all ingredients except the oil (dough will be sticky). Drop by rounded spoon fools into hot oil and cook 2-3 minutes until golden brown (turn to ensure even cooking). Remove from the oil onto paper-towel lined plate and sprinkle with powdered sugar! Repeat the process with the remaining batter.
