Description

Zucchini never was my favorite vegetable, maybe because I never knew how to make it tasty. Not long ago, I rediscovered it and loved it. These zucchini pancakes don’t taste like zucchini at all—they taste like potato pancakes! Very soft and smooth, they will satisfy you and your family.

Ingredients

  • FOR THE PANCAKES:
  • 2  Small Zucchini
  • 1  Red Onion
  • 2  Eggs
  • 3 cloves Garlic
  • 1 pinch Chopped Parsley
  • 1 pinch Chopped Dill
  • 1 teaspoon Salt
  • ½ teaspoons Pepper
  • 7 Tablespoons Flour
  • 1 teaspoon Baking Powder
  • Olive Oil, For Cooking
  • Freshly Grated Parmesan, For Garnish (optional)
  • FOR THE SAUCE:
  • 50 grams Greek Yogurt
  • Salt To Taste
  • Chopped Parsley And Dill, To Taste

Preparation

Grate zucchini and onion into a bowl. Beat in eggs, garlic, parsley, dill, salt and pepper. Mix well. Add flour and baking powder, and mix well.

Heat oil in a frying pan and form pancakes. Fry for several minutes on both sides.

For the sauce, mix all ingredients well. Add garlic if desired.

Serve pancakes with sauce. Garnish with Parmesan if desired—it really goes well with the pancakes!
