Chicken Limone is a satisfying and tasty light meal. Perfect for a summer evening and, most importantly, quick and easily prepared. Sautéed chicken breasts served with a lemon butter sauce and capers make a simple yet elegant meal that will make you feel like you are dining at your favourite restaurant.
Ingredients
- 4 whole Skinless Chicken Breasts, Pounded To 1/2-inch Thick Schnitzel
- 2 Lemons, Zest And Juice
- ¼ cups Plain Flour
- Salt And Pepper, to taste
- 2 Tablespoons Olive Oil
- 25 grams Butter, Chopped
- 2 cloves Garlic, Crushed And Chopped
- 2 Tablespoons Baby Capers (Drained)
- ½ cups Fresh Parsley, Chopped
Preparation
Place chicken breast into a shall dish and squeeze lemon juice over to marinate chicken. Set aside for 15 minutes. This will improve the flavour and ensure the chicken is nice and tender.
Coat chicken in flour seasoned with salt and pepper. Shake away excess.
Heat oil in a large, deep frying pan over medium heat. Add butter and garlic. When butter starts to foam, add chicken. Cook for 2 minutes on each side or until lightly browned. Add capers and juice left from the marinade along with lemon zest. Simmer 2 minutes or until slightly thickened or until chicken is cooked through. Add parsley and season to taste.
Serve chicken and spoon over the sauce.
