Beef and Avocado Quesadillas

Description

Oven baked quesadillas, no flipping required! What is better than beefy and cheesy quesadillas? What if we add avocado (super yum) and make them easier by baking them in the oven!

Ingredients

  • 2 Tablespoons Avocado Oil
  • ½  Onion, Diced
  • ½ pounds Ground Beef
  • ½ teaspoons Kosher Salt, Or More To Taste
  • 1 teaspoon Smoked Paprika
  • ½ teaspoons Onion Powder
  • 1 teaspoon Garlic Powder
  • 1 Tablespoon Chili Powder
  • 1 teaspoon Ground Cumin
  • 4  Medium Size Flour Tortillas
  • 1 cup Shredded Cheese
  • 1  Avocado, Sliced

Preparation

Preheat oven to 430ºF. Heat oil in a large skillet over medium heat. Add onion to the skillet and sauté until translucent, about 5 minutes.

Add ground beef and cook and crumble until cooked through. Add salt, paprika, onion powder, garlic powder, chili powder, and cumin. Stir to combine. Remove from the heat.

Oil a large sheet pan or spray with cooking spray. Place 2 tortillas on top. Layer toppings on the tortillas: cheese, meat, avocado, cheese. Then place another tortilla on top.

Bake in preheated oven for 8 minutes. Remove from oven, slice into 4 pieces each, and serve.
