Description

Amazing tomatillo salsa! Broil your veggies and then blend ingredients in a food processor for a quick and easy way to make this salsa. This is a great recipe for football season because it is so quick to prepare.

Ingredients

  • 1-¼ pound Tomatillos, Husked
  • ½ whole Large White Onion, Quartered
  • 2 whole Jalapenos, Seeded
  • 1 whole Green Pepper, Seeded And Quartered
  • 4 cloves Garlic, Peel On
  • ½ cups Cilantro, Chopped
  • 2 Tablespoons Fresh Lime Juice
  • ½ teaspoons Salt

Preparation

Position a rack near the top of the oven. Preheat broiler for 10 minutes. On a broiler pan, add the tomatillos, white onion, jalapenos, green pepper, and garlic. Broil for about 8 minutes. Be sure to watch veggies closely so that they have a nice char but do not burn. Rotate pan after 3–4 minutes. Remove veggies from oven and let cool for 5 minutes.

Remove the stem, membranes, and seeds from jalapenos and peel the garlic cloves. Add broiled veggies, cilantro, lime juice, and salt to a food processor. Process ingredients to desired consistency. For best results, refrigerate for 1–2 hours and then serve.
