Layers of delicious puff pastry dough drizzled with garlic butter, butternut squash, kale, red onion, eggs and finished with parmesan cheese. This Butternut Squash Tart is brunch deliciousness!
Ingredients
- 4 Tablespoons Unsalted Butter
- 3 cloves Garlic, Minced
- 1 whole Sheet Puff Pastry (thawed If Frozen)
- 6 whole Eggs, Plus 1 Egg For Eggwash
- 2 Tablespoons Water
- 15 ounces, weight Butternut Squash, Chopped
- 1 Large Onion, Sliced
- 1 cup Chopped Kale, Or More As Desired
- Kosher Salt And Freshly Ground Pepper
- Grated Parmesan Cheese To Taste
Preparation
Preheat oven to 375ºF.
Melt butter over low heat and add minced garlic, salt, and pepper.
Cover sheet pan with parchment paper. Dust counter with all-purpose flour. Roll out puff pastry dough and place on the sheet pan.
Beat 1 egg with water to make the eggwash. Brush puff pastry with egg wash.
Cover puff pastry with garlic butter. Add butternut squash and onions. Carefully break eggs on top, then add kale. Season with kosher salt and freshly ground pepper. Finish with Parmesan cheese.
Place in the oven for 30 minutes.
