  • 2 Tablespoons Finely Chopped Ramps Or Garlic
  • ¼ cups Finely Chopped Green Onions
  • ½ cups Chopped Cilantro
  • 1 teaspoon Sesame Oil
  • 1 teaspoon Freshly Chopped Garlic
  • 24  Wonton Wrappers (We Used 3×3 Inch Size)
  • 4 Tablespoons Vegetable Oil, For Cooking Dumplings (2 Tablespoons Per Batch)
  • ½ cups Water, For Cooking Dumplings (1/4 Cup Per Batch)
  • FOR THE DIPPING SAUCE:
  • ¼ cups Rice Vinegar
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Finely Chopped Green Onions
  • ½ teaspoons Sugar
  • ¼ teaspoons Garlic Powder
  • ¼ teaspoons Sesame Seeds

Preparation

In a medium mixing bowl, add ground pork, cabbage, carrots, ramps, green onion, and cilantro. Mix thoroughly. Add sesame oil and chopped garlic and mix.

The key to stuffing the wontons is to not overstuff them. They can split and not cook so a teaspoonful of filling is plenty. Place 1 teaspoon filling in center, and with a finger dipped in water, coat edge of wonton, fold over and seal. Then fold the two points of wonton together. Continue until all dumplings are stuffed.

Add 2 tablespoons vegetable oil to a large nonstick sauté pan and heat over medium heat. Once hot, place half of the dumplings in the oil and allow to cook for 2 minutes. Turn over and cook an additional minute. Add ¼ cup warm tap water to pan and cover immediatelly and allow to steam for 4–5 minutes. This will assure the filling is cooked completely. Remove from pan and repeat with remaining dumplings.

Combine all ingredients until sugar is dissolved. Dip dumplings in sauce and enjoy.
