Description

This is only very slightly different from the classic Mojito, with a demerara syrup instead of simple syrup.

Ingredients

  • 1 ounce, fluid Lime Juice
  • 10 leaves Mint
  • 2 ounces, fluid White Rum
  • ½ ounces, fluid Rich Demerara Syrup
  • 4 ounces, fluid Soda Water
  • FOR THE DEMARARA SYRUP:
  • ¼ cups Demerara Sugar
  • ⅛ cups Water

Preparation

Add lime juice and mint to a cocktail shaker. Gently muddle. Add remaining ingredients and shake well. Dump into a highball glass. Top with soda water.

For the rich demarara syrup:
Heat water to just before boiling and add sugar. Mix to dissolve. Cool before using.
