Great appetizer for any get-together.
Ingredients
- 3 whole Zucchini, Peeled, Cut Into Wedges
- 2 Tablespoons Sweetened Lemon Juice Concentrate (bottled)
- 1 teaspoon Salt
- 1 teaspoon Black Pepper
- 1 teaspoon Onion Powder
- 12 ounces, weight Bacon, Sliced In Half
Preparation
Preheat oven to 425ºF.
In a bowl, add zucchini wedges, lemon juice, salt, pepper, and onion powder. Stir gently to evenly coat wedges. One by one, wrap half a slice of bacon around a zucchini wedge and transfer to a nonstick rimmed baking sheet. Repeat until all wedges are wrapped. Lay then on the baking sheet in a single layer and roast 15 minutes.
Remove to paper towels to absorb excess bacon fat. Plate and serve.
I love these served with a sour cream, chive and hot sauce for dipping. You can use any type of dipping sauce you like. Ranch dressing works well. too.
