A great way to jumpstart your day!
Ingredients
- 1 whole Carrot, Peeled, Grated
- 1 whole Apple, Peeled, Cored, Grated
- ½ teaspoons Lemon Juice Concentrate (Sweetened)
- 1 Tablespoon Pure Honey
- ⅛ teaspoons Cinnamon
- 2 pinches Nutmeg
- ¼ cups Scant Maple Flavored Instant Oats
- ¼ cups (scant) Greek Yogurt
Preparation
In a small bowl, combine grated carrot, apple, lemon juice, honey, cinnamon, and nutmeg. Toss gently to mix.
In a clean 6-ounce Mason jar (or equivalent), add oats, followed by Greek yogurt. Add carrot-apple mixture on top. Cover with plastic wrap and refrigerate overnight.
I like to microwave this 30 seconds to warm ingredients before eating, but that is optional. Enjoy!
