Pecan & Sweet Potato Dip

Creamy and flavorful for any get-together!

Ingredients

  • 2 whole Sweet Potatoes
  • 4 ounces, weight Softened Cream Cheese
  • 4 ounces, weight Cool Whip Topping, At Room Temperature
  • ½ teaspoons Cinnamon
  • 2 pinches Nutmeg
  • 1 cup Pecans, Divided

Preparation

Pierce sweet potatoes with a fork a few times. Place on a plate, cover with paper towel, and microwave 8–10 minutes. When cool enough to handle, cut lengthwise and scoop flesh into the mixing bowl of a stand mixer. Using the paddle attachment, mix sweet potato flesh and cream cheese, about 1 minute, until combined. Add remaining ingredients (except pecans) and mix several minutes until creamy. Fold in half the pecans.

Transfer to a serving dish and garnish with remaining pecans. Cover and refrigerate until ready to serve.

Delicious with sugar, coconut bar cookies, and almost any baked goods. Enjoy!
