Super fun and delicious appetizer!
Ingredients
- 1 head Cauliflower, Cored, Separated Into Florets
- 2 whole Eggs, Beaten
- 1 teaspoon Salt And Black Pepper To Taste
- ½ cups Panko Or Plain Bread Crumbs
- 1 Tablespoon Fresh Chopped Parsley
- 1-¼ cup Aged White Cheddar Cheese, Grated
- FOR THE SAUCE (optional):
- 3 Tablespoons Mayonnaise
- 1 Tablespoon Ketchup
- 1 teaspoon Dill
- 1 Tablespoon Hot Sauce, Your Choice
Preparation
Preheat oven to 400ºF.
In a food processor, add cauliflower florets and pulse several times. Add beaten eggs, salt, black pepper, panko, and parsley. Process just until combined. Remove and transfer to a large mixing bowl.
Add grated cheese and stir with a sturdy spatula. Using a scoop, form balls and place in a mini 24-count muffin tin (I use nonstick). Bake 15 minutes or until golden brown.
For the serving sauce, if using, in a small mixing bowl add all ingredients and stir well to combine. Serve on the side. Scrumptious!
