Ingredients

  • ½ whole Fresh Pineapple, Cut Into 24 1-inch Cubes
  • 1 whole Lime, Zest And Juice
  • 1 pinch Salt And Ground Black Pepper To Taste
  • 3 whole Scallions, Cut Into 24 1-inch Pieces
  • 4 slices Bacon, Cut Into 24 Pieces
  • 12 whole Scallops, Halved

Preparation

Preheat oven to 400ºF. Soak 24 wooden toothpicks in warm water. Lightly coat a large, rimmed baking sheet with cooking spray.

In a medium bowl, toss pineapple with lime zest and lime juice, salt, and pepper.

Skewer each toothpick with scallion, bacon, scallop, and pineapple and stand up on the baking sheet. Bake about 12 minutes until the scallops and bacon are cooked through.
