Lemongrass Meatballs

Description

A meatball recipe that will add extra zest and flavor to a game day menu.

Ingredients

  • ½ pounds Ground Beef
  • ½ pounds Ground Pork
  • 1 teaspoon Red Curry Paste
  • ¼ teaspoons Kosher Salt
  • ½ cups Chopped Shallots
  • 2 Tablespoons Minced Lemongrass
  • 2 Tablespoons Minced Ginger
  • ¼ cups Cooked Jasmine Rice
  • Vegetable Or Canola Oil For Frying
  • ¼ cups Lightly Packed Cilantro Leaves
  • 1  Red Chili Pepper, Sliced

Preparation

Combine ground beef, ground pork, red curry paste, and salt in a large mixing bowl.

In a food processor, combine shallots, lemongrass, ginger and garlic. Process until it becomes paste-like. Add rice and pulse several times. Add mixture to the ground meat mixture until well incorporated.

Shape the mixture into golfball-sized rounds (about 16 balls) with your hands and spread rolled meatballs on a large clean surface, making sure that they do not touch.

In a large skillet, heat 1/4 inch of oil over medium-high heat. Add meatballs and roll frequently until evenly browned, about 10 minutes.

Transfer meatballs to paper-towel-lined platter or baking sheet to drain excess oil. Let it rest for a minute before transferring to bowls or a serving platter.

Garnish with cilantro leaves and sliced red chili pepper.
