Easy, quick and simple classic meatloaf recipe that makes amazing leftover meatloaf sandwiches.
Ingredients
- 3 slices Bread
- ½ cups Milk
- 2 Eggs, Beaten
- ½ cups Parmesan Cheese
- 1 Tablespoon Dried Parsley Flakes
- ¼ teaspoons Seasoned Salt
- ¼ teaspoons Salt
- ¼ teaspoons Pepper
- 1 pound Ground Beef
- ¾ cups Ketchup
- ¼ cups Brown Sugar
- ½ teaspoons Dry Mustard
- 3 dashes Hot Sauce, Optional
Preparation
In a large bowl, pour milk over bread slices and allow to soak for a couple minutes. Then stir (or use your hands) break up the bread (should basically fall apart).
Add the eggs, Parmesan cheese, parsley flakes, seasoned salt, salt, and pepper. Stir to combine.
Add in the ground beef and stir together (or use your hands).
Form the beef mixture into a loaf shape and place on a baking pan or broiler pan. I use a broiler pan so the grease can drain away while the meatloaf cooks. I also make sure to line the bottom section (the part without the holes) of the broiler pan with foil for simple clean up.
In a small bowl, mix together the sauce ingredients: ketchup, brown sugar, dry mustard, and hot sauce.
Pour half the sauce over the top of the meatloaf.
Bake meatloaf at 350°F for 45 minutes.
Pour the remaining sauce on the loaf and then bake for another 15 minutes.
Slice and serve!
Note: Leftovers are amazing! I slice a piece of the meatloaf microwave for about 30–45 seconds, maybe a minute for a bigger piece. Toast two slices of bread and place the meatloaf in between for a delicious sandwich the next day!
