Cheese Caraway Crackers

Description

Very cheesy, short crust crackers sprinkled with caraway seeds or salt or even sesame seeds, a perfect appetizer for your New Year’s party.

Ingredients

  • 2 cups Grated Gouda Or Cheddar
  • 7 ounces, weight Very Cold Butter
  • 2-½ cups All-purpose Flour
  • ½ teaspoons Salt
  • 1  Egg, Whisked For Egg-wash
  • Caraway Seeds Or Sesame Seeds, For Sprinkling

Preparation

Grate cheese and cut the very cold butter into small cubes. Place cheese, butter, flour, and salt in a food processor and pulse a few times until everything is crumbly. Taste the pastry and add more salt if you wish; it should be on the saltier side. Form a ball, wrap it plastic foil and refrigerate for 1 hour.

Preheat oven to 180ºC (350ºF). Line two baking trays with baking paper.

Roll the pastry on a floured surface (it is easier to do this in 2 batches) and cut the pastry into batons using a very sharp knife. Place the crackers onto the baking tray and brush them with egg wash. Sprinkle with caraway seeds. Sesame seeds or salt can be used instead, but caraway tastes best in this case.

Bake until golden brown, about 20 minutes, but keep an eye on them.
