Pumpkin Yogurt with Popped Amaranth

Description

Light and nutty amaranth has a lot of different sweet and savory applications, but they’re delicious when they’re popped like popcorn. You can turn the popped amaranth into breakfast bars or protein balls (there are tons of recipes on the internet for this), but I prefer treating it like a yogurt or smoothie bowl topping. It adds a wonderful nutty crunch!

Ingredients

  • ⅔ cups Plain Yogurt
  • 3 Tablespoons Pumpkin Puree
  • 1 Tablespoon Grade A Maple Syrup
  • ½ teaspoons Pumpkin Pie Spice
  • 1 Tablespoon Dried Cranberries
  • 1 Tablespoon Chopped Walnuts
  • 2 teaspoons Popped Amaranth

Preparation

Stir together yogurt, puree, maple syrup, and pumpkin spice until smooth and creamy. Transfer mixture to a bowl and top with cranberries, walnuts, and popped amaranth.

Don’t know how to make popped amaranth? Here’s how: Heat a dry medium skillet over medium-high heat. Once it’s hot, pour about a ½ cup of amaranth into the skillet. Stir constantly and you’ll eventually start to see the grains pop! FYI: only 70-75% of the grains will pop.
