A warm, comforting breakfast combining the flavors of pumpkin, cinnamon, and chocolate into a hearty baked oatmeal

Ingredients

  • 3 cups Old Fashion Oats
  • 1 teaspoon Baking Powder
  • 1-½ Tablespoon Pumpkin Pie Spice
  • ½ teaspoons Salt
  • 2  Eggs
  • 2 Tablespoons Honey
  • 2 cups Almond Milk
  • 15 ounces, weight Pumpkin Puree
  • 1 teaspoon Vanilla Extract
  • ⅓ cups Chocolate Chips

Preparation

Preheat oven to 350ºF.

In a large bowl, combine oats, baking powder, pumpkin pie spice, and salt. In another bowl, combine eggs, honey, almond milk, pumpkin puree, and vanilla extract. Add the wet ingredients to the dry ingredients. Stir in chocolate chips.

Pour mixture into a 9 x 13 baking dish. Bake for 30 minutes.
