My 9-year-old granddaughter made this recipe up. I’s great for breakfast or dinner. It takes a little time to assemble, but it’s yummy and simple.
Ingredients
- 4 slices Bacon
- 12 slices Good White Bread
- 2 Tablespoons Butter, Plus More To Butter The Dish
- 6 whole Eggs
- ⅓ cups Cream
- ¼ teaspoons Salt
- 4 ounces, weight Brie Cheese, Or More To Taste
Preparation
Put the bacon on a broiler pan and cook for 10 minutes, turning once, in the oven set at 450ºF. (You may also just cook the bacon in a pan.) Drain well and crumble. Reduce oven temperature to 350ºF.
Butter a souffle dish or a 10″ deep dish pie pan.
While the bacon is cooking, cut the crust off the bread slices and roll the bread thin. Butter each slice lightly.
Beat eggs with the cream and salt.
To assemble, place one layer of bread in the bottom of the dish (about 4 slices), cutting to make it fit. Pour half of the egg mixture over the bread. Sprinkle the bacon over this. Put another layer of bread, then pour the remaining egg mixture over the top. Put the last layer of bread slices on top, butter side up. Dot with the brie cheese.
Bake at 350ºF for about 40 minutes. Be careful not to over-bake. Serve with real maple syrup and fruit salad.
