Almond Joy Pancakes

Description

These are the most delectable pancakes ever. Fluffy, a little sweet, easy to make, low in calories and chocolaty!!

Ingredients

  • ⅓ cups Greek Yogurt, Plain, Non-fat
  • 2 whole Egg Whites
  • ⅓ cups Coconut Milk – Lite
  • ½ teaspoons Almond Extract
  • ⅓ cups Whole Wheat Pastry Flour
  • ½ teaspoons Baking Soda
  • ½ teaspoons Sugar
  • 1 Tablespoon Unsweetened Cocoa Powder
  • 1 Tablespoon Unsweetened Shredded Coconut
  • 1 Tablespoon Mini Chocolate Chips
  • Optional For Serving: Maple Syrup, A Pinch Of Coconut And A Few Mini Chocolate Chips

Preparation

1.)Mix Greek yogurt, egg, milk and almond extract into a small bowl. Set aside.

2.) In a separate bowl combine flour, baking soda, sugar, and cocoa powder.

3.) Combine the wet and dry ingredients and whisk till evenly mixed.

4.) Fold in coconut and chocolate chips.

5.) Over medium heat, place 1/4-cup of the batter onto a non-stick skillet sprayed with non-stick cooking spray) and cook till bubbles start appearing through the top of the pancake and then flip and cook the other side. About 1-2 minutes on each side.

6.) Top with maple syrup, a pinch of coconut and a few mini chocolate chips.

Makes eight 4″ pancakes.
