Apple Baked Oatmeal with Roasted Apples

This is very quick and easy to whip together. It keeps you full all morning!

Ingredients

  • FOR THE BAKED OATMEAL:
  • 2 cups Old Fashioned Oats
  • 2 Tablespoons Brown Sugar
  • ½ cups Raisins
  • ¼ cups Dried Cranberries
  • 1 Tablespoon Cinnamon
  • 1 pinch Allspice
  • ¼ teaspoons Kosher Salt
  • 1 teaspoon Baking Powder
  • 2 whole Eggs
  • ¼ cups Pure Maple Syrup
  • 1-⅓ cup Milk
  • ⅔ cups Applesauce, Preferably Homemade
  • 2 teaspoons Vanilla
  • 4 teaspoons Butter, Melted

  • FOR THE APPLES:
  • 4 whole Large Granny Smith Apples, Peeled
  • 4 teaspoons Fresh Lemon Juice
  • 4 teaspoons Pure Maple Syrup
  • 1-½ teaspoon Cinnamon

Preparation

Preheat the oven to 350ºF. In a bowl, combine the dry ingredients (oatmeal, brown sugar, raisins, cranberries, cinnamon, allspice, kosher salt, and baking powder). In another bowl, combine the wet ingredients (egg, maple syrup, milk, applesauce, vanilla, and melted butter). Add the wet ingredients to the dry and stir just until combined. Pour the mixture into a buttered 8 x 8 pan. Bake in the preheated oven, rotating halfway through, for 20 minutes until golden brown on the surface.

While the oatmeal is baking, prepare the apples. Slice the apples into 1/4-inch slices lengthwise. In a bowl, combine the lemon juice, maple syrup and cinnamon. Add the apples and toss until coated. Spread out on a baking sheet lined with parchment paper. If they are cramped, they will steam and become soft not roasted.

Bake in the oven for 15 minutes, flipping halfway through. Serve with the baked oatmeal. Enjoy!
