From time to time I love to take a traditional sweet recipe and to make it my own. I experimented with pancakes, and everyone loved it!
Ingredients
- 4 Apples, Grated
- 4 Tablespoons White Sugar
- 2 teaspoons Powdered Cinnamon
- 2 Eggs
- 1 pinch Salt
- 250 milliliters Milk
- 200 grams Flour
- ½ teaspoons Baking Powder
- FOR THE CREAM:
- 250 grams Mascarpone
- 100 milliliters Heavy Cream
- 2 Tablespoons Powdered Sugar
- 1 Tablespoon Chocolate Sauce, For Decorating
Preparation
In a sauce pan, add apples, white sugar and cinnamon and place on medium heat. Simmer for 20 minutes, stirring often. When apples are cooked, transfer to a bowl and mix at high speed until creamy.
Separately, whisk eggs, salt, milk and gradually add flour, mixing after each batch. Add baking powder and apple mixture and combine. In a skillet over low heat, fry pancakes until done.
For the cream, mix mascarpone cheese with powdered sugar and heavy cream. Assemble the pancakes in little cakes, and decorate with chocolate as you wish.
