Apple Pie Pancakes

Description

No one can ever tell you that you can’t have apple pie for breakfast. With the addition of grated apple, cinnamon, and oats, these pancakes could almost pass for apple pie and streusel.

Ingredients

  • 1 cup Pancake Mix
  • 1  Egg
  • 1 cup Milk
  • 1-½ teaspoon Cinnamon
  • 2 Tablespoons Sugar
  • ½ cups Oats
  • ½ cups Grated Apple
  • 2 Tablespoons Butter
  • 1  Small Apple, Thinly Sliced

Preparation

In a large bowl, combine pancake mix, egg, milk, cinnamon, sugar, oats, and grated apple. Whisk until well combined. If the batter is too thick, add another splash of milk. Set aside.

Heat griddle or large skillet over medium-low heat. Spray the griddle or skillet with nonstick spray. Ladle batter onto griddle or skillet. Flip pancake after bubbles rise to the surface and bottoms brown, approximately 2 to 4 minutes. Cook until second side is lightly browned. 

Hold pancakes on a sheet pan or ovenproof plate in a 200ºF oven. 

Heat a skillet over medium-high melt. Melt butter in the skillet. Add apple slices to the skillet in a single layer. Leave them to brown, flipping once, 5–8 minutes each side. 

Serve pancakes with browned apple slices.
