Description
I wanted to make my favorite baked pumpkin oatmeal, but I was out of milk so I modified my recipe to include apple cider, buttermilk and chopped apple. The results were delicious!
Ingredients
- 2 cups Oatmeal
- ½ cups Pecans Or Walnuts
- ¼ cups Brown Sugar
- 1 teaspoon Baking Powder
- 1 teaspoon Cinnamon
- 1 teaspoon Pumpkin Or Apple Pie Spice
- ¾ cups Apple Cider
- ½ cups Buttermilk
- ½ cups Pumpkin
- 1 whole Apple, Peeled, Cored And Chopped
- 2 Eggs
- 2 Tablespoons Butter, Melted
- 3 Tablespoons Flaxmeal (optional)
Preparation
Preheat oven to 350ºF. Spray an 8×8 inch baking dish with cooking spray.
In a large bowl, mix the oatmeal, pecans, brown sugar, baking powder, cinnamon, and pumpkin pie spice. Set aside.
In another large bowl, blend apple cider, buttermilk, pumpkin, apple, eggs, butter, and flaxmeal. Mix well and add to the oatmeal mixture. Stir until well combined. Pour into the greased baking dish and bake for 30-40 minutes until the center is set.
