Description
Very easy to make, absolutely yummy and the leftovers freeze very well!
Ingredients
- 1-¼ pound Boneless Skinless Chicken Breasts, Cut Into 1/2-inch Cubes
- 2 cups Low-sodium Chicken Stock, Store Bought Or Homemade
- 11 ounces, weight Canned Whole Kernel Yellow Corn, Drained
- 30 ounces, weight Canned Cannellini Beans, Drained
- 1 Small Yellow Onion, Chopped
- ½ cups Canned, Diced Green Chilies
- 14-½ ounces, weight Canned Diced Tomatoes, Drained
- 1 package (1 Oz. Size) Chili Seasoning (McCormick Makes A Good One!)
- ½ teaspoons Garlic Powder
- Sour Cream, Tortilla Chips, Chopped Chives, Shredded Cheddar Cheese For Topping If Desired
Preparation
Place all of the ingredients (except toppings) in a large crockpot. Put the lid on and cook over low heat for 8 hours, stirring often. Serve with desired toppings.
