Description

Very easy to make, absolutely yummy and the leftovers freeze very well!

Ingredients

  • 1-¼ pound Boneless Skinless Chicken Breasts, Cut Into 1/2-inch Cubes
  • 2 cups Low-sodium Chicken Stock, Store Bought Or Homemade
  • 11 ounces, weight Canned Whole Kernel Yellow Corn, Drained
  • 30 ounces, weight Canned Cannellini Beans, Drained
  • 1  Small Yellow Onion, Chopped
  • ½ cups Canned, Diced Green Chilies
  • 14-½ ounces, weight Canned Diced Tomatoes, Drained
  • 1 package (1 Oz. Size) Chili Seasoning (McCormick Makes A Good One!)
  • ½ teaspoons Garlic Powder
  • Sour Cream, Tortilla Chips, Chopped Chives, Shredded Cheddar Cheese For Topping If Desired

Preparation

Place all of the ingredients (except toppings) in a large crockpot. Put the lid on and cook over low heat for 8 hours, stirring often. Serve with desired toppings.
