Description
This Asparagus and Bacon Frittata is full of flavor and doubles as a quick and easy breakfast or a tasty weeknight meal!
Ingredients
- 6 Eggs
- ½ cups Milk
- ½ teaspoons Salt
- ½ teaspoons Pepper
- ⅛ teaspoons Garlic Powder
- ¼ teaspoons Dried Basil
- 2 Tablespoons Olive Oil
- 1 bunch Asparagus, Tough Ends Removed Then Cut Into 1/2 Inch Pieces
- 8 slices Bacon, Cooked And Crumbled
- 1 cup Shredded Mozzarella Cheese
Preparation
Preheat oven to 350 F.
In a medium bowl, whisk together eggs, milk, salt, pepper, garlic powder and basil. Set aside.
In a large (8 to 10 inch) cast iron skillet, heat olive oil over medium heat. Saute asparagus for 5-10 minutes, or until tender. Add cooked and crumbled bacon into the skillet and stir to combine. Pour egg mixture over asparagus mixture. Top with mozzarella cheese.
Remove skillet from the stove top and put it into the oven. Bake for 20-25 minutes or until lightly browned on top and middle is set. Remove from oven and let it cool for 5 minutes. Serve immediately. Enjoy!
