Springtime favourite!!
Ingredients
- 6 whole Eggs
- ⅓ cups Milk
- 1 Tablespoon Butter
- 2 cups Asparagus, Chopped Into 1″ Pieces
- 1 cup Brie Cheese, Diced
- Salt And Pepper, to taste
Preparation
Preheat oven to 400 F. Whisk eggs and milk together in a bowl until well blended. Add salt and pepper to taste and set aside.
Melt the butter in a oven proof fry pan, on medium low heat. I really like using my cast iron pan for this. Add the eggs into the skillet and sprinkle on the asparagus. Bake in the preheated oven for 5 minutes. Remove it from the oven and top with brie cheese. Bake a further 5-7 minutes and then remove it from the oven for a moment. Preheat brolier and then broil it until lightly golden brown. Let it rest for a few minutes and then slice into wedges.
