Description
The best quiche I’ve ever had … and easy! Bacon, red peppers and onions in a creamy Swiss cheese egg custard, so delicious you’ll be making it for your family for dinner!
Ingredients
- 2 cups Crushed Saltine Crackers
- 1 stick Butter
- 4 whole Eggs, Beaten
- 2-¼ cups Swiss Cheese, Shredded
- 8 slices Bacon (cooked)
- 2-¼ cups Half-and-half
- 2 Tablespoons Red Pepper, Chopped
- 2 Tablespoons Red Onion, Chopped
- 1 teaspoon Salt
- ½ teaspoons Pepper
- ½ teaspoons Paprika
Preparation
In a food processor, whiz crackers up until fine crumbs are formed (or place in a gallon Ziploc baggie and use a rolling pin to crush).
In a medium saucepan, melt butter over medium heat. Remove from heat and stir in the cracker crumbs. Spread cracker crumbs in the bottom and up the sides of a pie dish to form the crust, pressing firmly.
Starting with eggs, combine remaining ingredients in a large mixing bowl and pour into the crust. Use a spoon or spatula to evenly push around the cheese and other fillings. Bake for 30-40 minutes or until a fork inserted in the center of the quiche comes out clean without any eggs sticking to it.
Other variations: switch up bacon for cooked crumbled sausage, or ham chunks.
