Aunt Rocky’s Denver Scramble

Description

A quick breakfast scramble based on a classic Denver Omelette. Suitable for Atkins, Keto, LCHF, low carb, diabetic, low glycemic, gluten free, egg fast.

Ingredients

  • 1 Tablespoon Butter
  • 3 ounces, weight Fully Cooked Ham Steak, Chopped (I Use Farmer John)
  • 2 stalks Green Onions. Chopped And Divided
  • 4  Large Eggs
  • 2 Tablespoons Heavy Whipping Cream
  • 2 Tablespoons Sharp Cheddar Cheese, Shredded
  • Seasoning To Taste

Preparation

Melt butter in a medium skillet over medium heat. Add chopped ham and most of the onions, reserving some of the green tops for garnish. Cook until onion whites are translucent and ham is beginning to brown.

While ham and onions cook, mix eggs with cream in a small bowl. Just stir lightly, do not whisk together.

When ham and onions are ready, pour egg mixture over all, gently stir with a spatula to mix. Turn sections over in the pan as it cooks until eggs are done. Don’t overcook or the eggs will get dry and tough.

Serve on plates. Top with cheese, and garnish with reserved green onion tops.
