Description
A zero-carb fat bomb with an exceptional flavor profile! I don’t know where this recipe originated. The bare bones recipe has been floating around the Internet with no attribution for a long time. This is the way I make them. Suitable for gluten-free, Atkins, keto, lchf, low carb, diabetic, low glycemic.
Ingredients
- 4 Tablespoons Organic Valley Cultured Cream Cheese
- 4 Tablespoons Butter
- 4 Tablespoons Heavy Whipping Cream
- ½ teaspoons Vanilla Extract
- 1 teaspoon Caramel Extract
- ¼ teaspoons Sea Salt
- 3 Tablespoons Confectioner’s Swerve (powdered Erythritol)
Preparation
Melt cream cheese and butter together in large measuring cup. Whisk until creamy. Add cream, vanilla and caramel extracts. Whisk again until creamy. Add sea salt and confectioner’s Swerve and whisk until smooth.
Pour into 1-tablespoon molds and freeze until fully set, preferably overnight. Store in freezer.
Alternate method:
If you don’t have molds, heat the cream cheese and butter until just soft enough to whisk but not melted. Add all other ingredients and whisk until very smooth. Spoon by 1 tablespoon measure onto waxed paper lined cookie sheet. Freeze.
