Avocado & Sauteed Mushroom Toast

Description

A healthy and filling breakfast of avocados and sauteed mushrooms on sourdough toast that takes less than 10 minutes to make!

Ingredients

  • 2 Tablespoons Olive Oil
  • 2 slices Sourdough Bread
  • 5 ounces, weight Mushrooms (maitake Or Portobello Work Well)
  • Salt And Pepper
  • 1 whole Avocado, Peeled And Cut Into Segments

Preparation

Heat olive oil in a frying pan on a medium-high heat.

Place bread in the toaster or under the grill and leave to brown for 2–3 minutes.

Add mushrooms to the frying pan with a pinch of salt and black pepper and fry for 3 minutes, until they start to slightly brown.

Layer slices of avocado over your toast and then pour over the mushrooms along with any remaining olive oil.
