This is honestly the best way to eat brown and wild rice—it’s creamy, moist, and unbelievably delicious!
Ingredients
- FOR THE AVOCADO RICE:
- 1 Avocado, Medium
- 1 Tablespoon Apple Cider Vinegar
- ½ teaspoons Paprika
- Salt And Pepper, to taste
- 1 cup Brown And Wild Rice, Cooked
- FOR THE SALAD:
- 2 cups Fresh Rocket
- ¼ Roast Chicken, Shredded
- ½ Green Pepper, Finely Diced
- 2 Nectarines, Sliced
- ¼ cups Chopped Chives
- ½ cups Feta Cheese (optional)
Preparation
For the avocado rice:
In a medium bowl, mash avocado with apple cider vinegar, paprika and salt and pepper. Fold into the cooked rice until well combined.
For the salad:
Pile the avocado-rice onto a salad platter or bowl. Layer on the rocket, chicken, green pepper, nectarines and chives. Top with crumbled feta cheese (optional) and serve.
