Caramelized pieces of bacon all mixed inside tasty waffles. The perfect breakfast! (Or dinner. I won’t tell.)

Ingredients

  • 6 slices Bacon
  • 2 Tablespoons Brown Sugar, Divided
  • 1 cup Pancake Mix (I Used Bob’s Red Mill 7 Grain.)
  • 2 whole Eggs
  • ¾ cups Water
  • ¼ cups Oil

Preparation

1. Preheat an oven to 400ºF. Spray a baking sheet with cooking spray. Arrange the bacon slices on the baking sheet and sprinkle with about half of the brown sugar. Bake until the bacon is crispy and the brown sugar is caramelized, about 10 minutes total, flipping the bacon halfway through. Immediately remove the bacon to a cutting board; cut/crumble into small pieces and set aside.

2. Preheat a waffle iron and grease with cooking spray.

3. Prepare the pancake mix (you’ll typically need water, eggs, and oil, as directed in mix package) and add in the remaining brown sugar. Then add the bacon and stir gently, being careful to just mix it.

4. Ladle the batter into the preheated waffle iron and cook until golden brown. Serve hot.
