Description
This gluten-free, grain-free, paleo Bacon Guacamole is a quick and easy-to-make appetizer just waiting to be devoured. It boasts cilantro, tomatoes, avocados, green and red onion, and, of course, crisply-cooked bacon!
Ingredients
- 2 Avocados
- ½ teaspoons Lime Juice
- ⅛ teaspoons Sea Salt
- 1 Roma Tomato
- ½ cups Cilantro, Finely Chopped
- ¼ cups Red Onion, Chopped
- ¼ cups Green Onion, Thinly Sliced
- 5 strips Bacon, Well Cooked, Divided
Preparation
Scoop out flesh of avocados using a spoon and place in large mixing bowl. Mash with potato masher or two forks. Add lime juice and sea salt. Continue mashing evenly distribute flavors.
Add tomato, cilantro, red onion, and green onion, stirring with a spoon to evenly distribute the ingredients.
Break 4 slices of bacon into small pieces and stir them into the guacamole. Top the guacamole with the broken pieces of the remaining slice of bacon.
Serve immediately with tortilla chips or bacon “chips” and “spoons”.
