What’s better than bacon for breakfast? Oh wait. More bacon.
Ingredients
- FOR THE WAFFLE BATTER:
- 1-¼ cup All-purpose Flour
- ¼ cups Cornmeal
- 1-½ teaspoon Baking Powder
- 1 teaspoon Granulated Sugar
- ½ teaspoons Baking Soda
- ½ teaspoons Salt
- ¼ teaspoons Ground Black Pepper
- 2 whole Eggs
- ⅓ cups Melted Unsalted Butter
- 1-¼ cup Buttermilk
- 4 slices Bacon, Cooked, Chopped
- FOR THE GARNISH:
- 2 whole Eggs
- Favorite Kind Of Salsa, To Serve
- 2 Tablespoons Chives, Chopped
Preparation
Preheat your waffle maker. In a large bowl, whisk together flour, cornmeal, baking powder, sugar, baking soda, and salt. In a medium bowl, whisk together eggs, butter, and buttermilk. Add the wet ingredients, all at once, to the dry ingredients. Add the bacon. Stir until just incorporated. Try not to overmix the batter.
Cook according to your waffle machine instructions. While the waffles cook, fry up thesunny side up eggs in a nonstick frying pan. Serve waffles with eggs and salsa. Sprinkle chives over waffles.
Waffles are best served immediately.
