Description

Bacon-wrapped dates with blue cheese, smoky almonds and fresh rosemary … sounds different but good, eh? An unorthodox appetizer that covers all the five tastes. Complicated, layered, and thought-provoking (ok, maybe that’s a stretch), it’s a perfect bite for any party. Who knew that a simple blue-collar worker could produce something this elegant and refined? Certainly not me. But the proof is in the bacon.

Ingredients

  • 12 strips Bacon
  • 2 Tablespoons Brown Sugar
  • 1 Tablespoon Cayenne Pepper
  • 1 Tablespoon Hot Paprika
  • 18 whole Dates, Pitted And Halved
  • 36 whole Smoky Almonds
  • 4 ounces, weight Blue Cheese
  • 3 sprigs Rosemary

Preparation

Note: You will also need a baking sheet and wire rack.

Preheat oven to 400°F. Place the bacon on a flat, clean surface. Lightly sprinkle both sides with brown sugar, cayenne pepper and paprika to cover. Slice the bacon into thirds. Place half a date into the center of each slice of bacon then stuff the date with 2 almonds. Place enough blue cheese on the sides of the date, about ⅛ teaspoon per side (or ¼ teaspoon on top). Then, taking one side of the bacon, gently roll over the date, ensuring the cheese stays inside. Pull on the bacon, slightly stretching it to ensure a tight roll.

Place the appetizer seam side down on the wire rack, leaving enough space in between them so they can cook properly. You may have to work in batches. Cook for 15 minutes or until the bacon has fully cooked. Remove from the oven and allow to cool for 5 minutes.

Slice the appetizers in half and then stuff 2 rosemary leaves into them. Place on a warmed platter and serve immediately. Indulge!
