Bacon Wrapped Spinach Scallops

Description

These tasty appetizers are easy to put together and oh so delicious! Perfect for a party or just a romantic dinner for two.

Ingredients

  • 20 leaves Fresh Baby Spinach Leaves
  • 10 whole Sea Scallops, Cut In Half Widthwise
  • 10 strips Bacon, Halved Widthwise
  • 1 whole Lemon, Cut In Half, Divided Use
  • ¼ teaspoons Pepper

Preparation

Fold a spinach leaf around each scallop half. Wrap a piece of bacon around the spinach/scallop and secure with a toothpick. Place on a baking sheet or broiler pan. Squeeze half of the lemon over scallops and sprinkle with black pepper. Broil the scallops 3-4 inches from the heating element for 6 minutes on each side or until bacon is crisp. Squeeze remaining half of lemon over each scallop again and serve immediately.
