Description
This baked avocado, eggs and bacon recipe can be made in less than five minutes.
Ingredients
- 1 Ripe Avocado
- 2 Eggs
- 2 Grape Tomatoes
- 1 slice Cooked Bacon
- ¼ cups Spinach
- Salt And Pepper, to taste
- 1 Tablespoon Mozzarella Cheese
Preparation
Slice avocado in half and remove pit. Scoop out insides of avocado and place in a large bowl.
Chop tomatoes, bacon and spinach into small pieces. Add eggs, tomatoes, bacon and spinach to bowl. Scramble.
Pour ingredients back into avocado skin. Cover in tin foil and bake at 350ºF for 5–10 minutes. Remove from oven and add salt, pepper and cheese.
