A healthy breakfast of protein, fiber and good-for-you fats.

Ingredients

  • 2  Avocados, Pitted And Some Flesh Scooped Out
  • 2  Large Eggs
  • ¼ teaspoons Salt
  • ¼ teaspoons Pepper
  • 1 teaspoon Herbs For Garnish

Preparation

Preheat oven to 400°F.

Slice avocados, pit them and scoop out a bit of flesh from around the sides.

Crack one egg into each avocado and top with salt and pepper. Place on a cookie sheet with parchment paper. Bake for 15 minutes, or until the egg is set and fully cooked.

Garnish with herbs and enjoy.
