Description
Baked oatmeal stuffed with fruit, nuts, and vanilla. To die for!
Ingredients
- 2 cups Mixed Berries, Frozen
- 2 cups Rolled Oats
- ½ cups Pecans, Chopped
- 1 teaspoon Baking Powder
- ½ teaspoons Salt
- 1 cup Apple, Peeled And Diced
- 1 cup Almond Milk, Vanilla
- ½ cups Yogurt, Vanilla
- ⅓ cups Maple Syrup
- 2 teaspoons Vanilla Extract, The Good Stuff
- 1 Egg
Preparation
Preheat oven to 375°F. Oil a 9-inch pie pan with cooking spray; set aside.
In a large bowl, stir together berries, oats, pecans, baking powder, salt and apple.
In a medium bowl, whisk together milk, yogurt, syrup, vanilla, and egg; stir into oat mixture.
Transfer to prepared pan and bake until firm and golden brown on top, about 50 minutes. Cut into slices and serve.
Feel free to use any variety of fruit. Summer peaches would be amazing in this recipe! Also, you may also substitute regular milk for the almond version used here.
