Here’s a delicious baked carob oatmeal bar recipe that’s completely diary-free and gluten-free.
Both crust and filling require only 3 ingredients each and they are very easy to make.
Ingredients
- FOR THE CRUST:
- ¼ cups Coconut Oil (not Melted)
- 1 cup Oat Flour
- 3 Tablespoons Maple Syrup
- FOR THE FILLING:
- 12 whole Dates
- 3 whole Eggs
- 5 Tablespoons Carob Powder
Preparation
Pre-soak your dates in water if you need to. Preheat oven to 180°C (350°F).
With a fork, mix hard coconut oil with oat flour and maple syrup. Transfer crust mixture to a tray and press down. Bake for about 10 minutes.
Take dates out of water and mash into a paste. Add date paste to the eggs. Add carob powder little by little while whisking.
Take the crust out of the oven and give it a few minutes to cool slightly. Pour filling over and bake until evenly baked, about 15–20 minutes. Let cool and enjoy!
