Description

Juicy, tender roasted chicken with carrots, celery, onion and mushrooms. The perfect quick weeknight meal.

Ingredients

  • 1 cup Celery, Cut Into Bite-size Pieces
  • 1 cup Carrots, Cut Into Bite Size Pieces
  • 1 cup Onion, Cut Into Bite Size Pieces
  • 1 cup Mushroom, Cut Into Bite Size Pieces
  • ½ Tablespoons Olive Oil
  • 1-¼ pound Skinless, Boneless Chicken Breasts
  • ¼ cups Balsamic Dressing (your Favorite Kind)
  • ¼ teaspoons Salt
  • ¼ teaspoons Ground Pepper
  • ½ teaspoons Oregano

Preparation

Preheat oven to 400 F. Spray a 9×13 baking dish with cooking spray.

In a bowl, add the vegetables and olive oil and mix until combined.

Place chicken in a baking dish in a single layer and surround with vegetables. Add balsamic dressing over the chicken and sprinkle with salt, pepper and oregano.

Cover with foil and bake in the oven for 40 minutes, until vegetables are tender and chicken is cooked through.
