Baked Cookie Oatmeal

Description

A gluten-free, clean-eating breakfast that tastes just like a cookie!

Ingredients

  • 6 Tablespoons Unsweetened Applesauce
  • 2 Tablespoons Peanut Butter
  • 2 Tablespoons Honey
  • 1 teaspoon Vanilla Extract
  • ½ cups Gluten Free Oats
  • ½ teaspoons Baking Powder
  • 2 Tablespoons Almond Meal Or Almond Flour
  • 1 Tablespoon Semi-Sweet Chocolate Chips

Preparation

In a small oven-safe ramekin (I use a 2 c/470 ml ramekin), mix the unsweetened applesauce, peanut butter, honey and vanilla extract (I often mix this the night before, refrigerate, and have less to do in the morning).

Preheat the oven to 350°F. Remove the ramekin from the fridge, if it’s been in overnight. Stir in the oats, baking powder, and almond meal/flour. Once all mixed, stir in the chocolate chips.

Bake for 15 minutes. Eat and enjoy!
