Baked Eggs Florentine

Description

A simple breakfast baked in individual dishes that give a beautiful finish and gourmet taste.

Ingredients

  • 1 cup Spinach
  • 1 cup Mushrooms
  • 1 cup Tomatoes
  • 1 sprig Basil, Leaves Removed And Torn
  • 2 Tablespoons Butter, Cubed
  • ½ cups Heavy Cream
  • Shaved Parmesan For Sprinkling
  • 8 whole Eggs
  • Salt And Pepper, to taste

Preparation

Preheat oven to 450 degrees. Grease 4 individual sized casserole dishes or ramekins.

In each dish, layer spinach, mushrooms, tomatoes, half the basil, butter and heavy cream, dividing equally. Place in the oven for 7-8 minutes to wilt the spinach and melt the butter.

Remove from the oven, sprinkle each dish with parmesan cheese. Carefully add two whole eggs to the top of each dish. Top with a dash of salt, pepper and the remainder of the basil.

Return to the oven and cook for 7-8 minutes more. For firmer yolks, cook an additional 2-3 minutes.

Remove from the oven and allow to rest before serving.
