Baked Peaches & Raspberry Sauce

Ingredients

  • 2 whole Ripe Peaches, Peeled, Pitted, And Halved
  • 2 Tablespoons Pure Honey
  • 1-¼ cup Fresh Raspberries (or Frozen, If Necessary)
  • 2 Tablespoons Granulated Sugar
  • ¼ teaspoons Cornstarch
  • Whipped Cream, For Garnish (optional)

Preparation

Preheat oven to 400ºF.

Brush honey inside each peach half. Place on a nonstick baking dish and cover with foil. Bake 12 minutes until tender but not mushy.

While peaches are baking, prepare the sauce. In a small saucepan over medium high heat, add raspberries, sugar, and cornstarch. Stir until syrupy. Remove from heat and pour through a mesh sieve under a bowl to discard seeds.

Plate baked peaches and add raspberry sauce (be generous) over the top. Serve with a dollop of whipped cream if desired.
