Celebrate the flavors of summer with this quick and easy balsamic salmon and strawberry salsa!
Ingredients
- 1-½ pound Fresh Wild Alaskan Salmon Fillets
- ¼ cups Balsamic Vinegar
- 1-½ cup Diced Strawberries
- ¼ cups Chopped Cilantro
- 1 Tablespoon Diced Jalapeno
- 2 Tablespoons Diced Green Onion
- 2 teaspoons Lime Juice
- 1 dash Salt And Pepper, to taste
Preparation
1. Preheat oven to 375 F.
2. Place salmon fillet on a rimmed baking sheet and brush it with a few coats of balsamic vinegar. Reserve the rest of the balsamic for later. Season salmon with a dash of salt and pepper.
3. Bake salmon for 15-20 minutes until cooked through.
4. While salmon cooks, make the salsa. Combine strawberries, cilantro, jalapeño, green onion, and lime juice in a medium bowl and stir to combine. Add salt and pepper to taste. Store salsa in the fridge until you’re ready to swerve.
5. When salmon is cooked, brush a bit of the remaining balsamic vinegar over the top. Top salmon with strawberry salsa and serve immediately.
