Banana-Cinnamon Rice Pudding

Description

A great dessert any time of the year. Serve with a dollop of whipped cream on top, and enjoy!

Ingredients

  • 4 whole Ripe Bananas, Peeled, Sliced Into Pieces
  • 2 cups Low-fat (1%) Milk
  • 1-½ teaspoon Cinnamon
  • ½ teaspoons Nutmeg
  • 1 teaspoon Pure Vanilla Extract
  • 1 cup Cooked Short Grain White Rice

Preparation

Preheat oven to 375ºF.

In a food processor, add banana pieces and pulse several times. Add milk, cinnamon, nutmeg, and vanilla extract, and run processor to puree. Add mixture to a baking dish (I use a 9×5 pyrex dish). Stir in rice. Cover dish with foil and bake for 20 minutes.

Allow to cool down before serving. We love this warm with some whipped cream on top! Hope you enjoy as much as we do.
