Banana pancakes with granola, the perfect way to start a Saturday morning!

Ingredients

  • 1-½ cup Flour
  • 3 Tablespoons Sugar
  • 1-½ teaspoon Baking Powder
  • ½ teaspoons Baking Soda
  • 1 pinch Kosher Salt
  • 1 cup Granola
  • 2 whole Eggs
  • 2-½ cups Buttermilk
  • 2 whole Bananas, Smashed
  • 3 Tablespoons Melted Butter

Preparation

1. In a large bowl, add the flour, sugar, baking powder, baking soda, salt, and granola; stir to combine. In another bowl, beat the eggs with the buttermilk.

2. Pour the egg mixture over the flour mixture and stir together until the dry ingredients are moistened.

3. Fold in the mashed bananas. Gently stir in the melted butter.

4. Heat a large griddle or skillet over medium heat. Spray the heated griddle or skillet with nonstick cooking spray.

5. When warm, ladle on batter using a 1/4 cup measuring cup. Wait for bubbles to appear on the top of the pancake, then flip, and continue to cook on the other side. Repeat with remaining batter.
