All the same flavor profiles of banana bread in baked oatmeal form!
Ingredients
- 3 cups Quick Oats
- ⅓ cups Brown Sugar
- 1 teaspoon Cinnamon
- 2 teaspoons Baking Powder
- ⅛ teaspoons Salt
- ½ cups Chopped Walnuts
- 3 Ripe Bananas, Mashed
- ½ cups Applesauce
- 1 cup Milk
- ¼ cups Butter, Melted
- 1 teaspoon Vanilla
- 1 Egg
Preparation
Preheat oven to 350ºF. Spray an 8×8 inch pan.
In a large bowl, combine the oats, brown sugar, cinnamon, baking powder, salt, and walnuts. In a smaller bowl, whisk together the mashed bananas, applesauce, milk, butter, vanilla, and egg.
Add the liquid mixture to the dry mixture and whisk to combine. Pour into prepared baking dish.
Bake for 30-35 minutes or until the top is golden brown. Serve immediately with yogurt, honey, and additional chopped nuts.
